A good part of my days while staying home with the kids is thinking about food. I try to make sure my toddler eats her fruits (as she refuses to eat any vegetables) and that dinner is ready when my husband gets home. It’s not always easy, but sometimes the kids behave well and I can make a proper dinner.
I usually look in the fridge to see what we have and what I can make in less than 1 hour. Sometimes I come up with some creative weird recipes that turn out tasty. So why not share? I’m creating a new category for creative recipes in my blog and will try to put something in at least once a week. Blame my children if I don’t post frequent enough 🙂
In the fridge I had a couple of zucchinis and cherry tomatoes. For protein, got a few cans of tuna in the pantry. So here we go.
I put the white rice to cook the rice cooker, and sliced the zucchinis. Now what? Well the only thing I could think of was tuna casserole.
You can make your favorite tuna casserole recipe. I kept it simple:
4 cans of tuna,
3 table spoons of butter,
1 table spoon of corn starch,
2 cups of milk, I used 2% reduced fat
1/2 cup light cream,
salt, pepper, dried sage, dried thyme, onion powder, garlic powder (add to taste)
Melt the butter, add tuna and cook on the stove on low heat for approximatly 5 min.
Dissolve the corn start in the milk and add it to the pan and mix well.
Add salt, pepper, dried sage, dried thyme, onion powder and garlic powder to taste.
Add light cream. (You may add more or less milk or use heavy cream to make it more or less creamy)
On a side, spray oil on a frying pan and add the sliced zucchinis. Fry both sides until light brown.
Pour the tuna casserole on a glass dish and arrange the zucchinis on top. I also added sliced cherry tomatoes and some graded Parmesan cheese.
It turned out very tasty! The zucchinis were a great addition. You can also put the dish in the oven to melt the cheese or to broil it.
