Hello! How about a light soup for dinner? Try out this broccoli soup recipe!
Here is what you will need:
3 tablespoons of butter
2-3 minced garlic cloves
2 tablespoons of onion powder (or 1-2 fresh onions chopped)
1 tablespoon of dried thyme
4 cups of fresh chopped broccoli (stems and florets) – frozen broccoli can also be used.
1 tablespoon of fresh minced ginger
1 cup of white wine
1 large potato
Juice of 1 lemon
1 cup of Half and Half or light cream (optional)
Salt and pepper to taste
Melt the butter, then add minced garlic, onion, ginger, thyme, and broccoli. Add enough water to cover the broccoli and simmer until the broccoli is tender. Add the wine, the lemon juice, and salt and pepper to taste.
On the side, peel the potato and cut it into small pieces then cook it in boiling water until tender.
Add the cooked potatoes to the broccoli soup and puree using an immersion blender, then add the cream (optional) and mix well.
Serve it with french baguette and shredded mozzarella or cheddar cheese.
