This is one of my favorite recipes, I’ve been making it since I first learned how to cook – so it is quite easy to make 🙂
The pie I will describe here is made with chicken and frozen vegetables, but you can replace the filling to anything you like. I had made it with frozen vegetables, tuna and vegetables, and ham and cheese. It is so good! You have to try it out!
First, place 2 large chicken breasts in a saucepan with enough water to cover it. Bring it boil and simmer until chicken is fully cooked (not pink), approximately 30 min. To make it faster you can cut the chicken breasts in half. Transfer the chicken breast to a bowl or a cutting board and shred it using 2 forks.
For the chicken and vegetables filling, I fried half an onion (chopped) on a saucepan, added 2 teaspoons of minced garlic, the chicken, and 1-2 cups of frozen mixed vegetables. Then, I added 1 tablespoon of dried rosemary, half tablespoon dried thyme, 1 tablespoon of salt (I like salt), sprinkled some crushed red peppers, and added 1/2 can of marinara tomato sauce. Cooked it for 10-15 min. You want it to be moist but not too juicy.
Add the following ingredients into a blender:
1 1/2 cups of milk
3/4 cup oil (I used canola oil)
1 1/2 cups of all purpose flour
1 tablespoon of baking powder
1 teaspoon of salt
Process the blender for a few minutes until the dough is smooth.
Prepare a 9″ round baking pan: grease it and spread a thin layer of flour (I do that so the pie doesn’t stick to the pan).
Add half of the dough to the pan, then spread the chicken and veggies filling. I like to press it down a little bit. Then cover with the other half of the dough.
On top you can add sliced tomatoes and bell peppers. Sprinkle shredded Parmesan cheese and bake it for 30-40min at 400 F.
